It was popular in America as early as the nineteenth century, when it was plentiful and widely used as a sweetener in dishes and as a component in the brewing of beer. So much so that George Washington wrote a recipe for molasses beer! Molasses was produced by harvesting sugar cane and stripping it of its leaves. Sugar cane juice was extracted by crushing, chopping, or smashing it. The juice is heated to concentrate it and begin the crystallization of sugar. This method is reputed to have the greatest sugar concentration.

In the southern parts of the United States, the initial syrup is commonly referred to as cane syrup rather than molasses. The second boiling operation involves removing sugar, which produces a harsh flavor. The third boiling of the sugar syrup produces a dark, thick blackstrap molasses with a strong taste. Molasses, unlike highly processed sugars, includes considerable levels of vitamin B6 as well as minerals including calcium, magnesium, iron, and manganese. A tablespoon of each of these nutrients can offer up to 20% of the recommended daily intake.
