The Acadians, or Cajuns, as they are now called, immigrated from Canada in the 1700s and lived in the bayous of what is now the Southern United States. Consuming crawfish at the time was mostly motivated by need due to its low cost and ease of availability. By the 1800s, Acadians had begun adapting classic Canadian lobster recipes to the crawfish, a considerably smaller relative of crustaceans. According to documentation from the Louisiana Office of Tourism, “Creole restaurateurs in New Orleans caught on, and once it took off in the Big Easy, the secret was out: crawfish became synonymous with Louisiana food.”

Crawfish boils, like other facets of the tremendous cultural transformation in Louisiana, developed in the 1900s. The state government chose the crawfish as Louisiana’s official crustacean in 1980. The two main kinds caught in Louisiana’s yearly 100 million pound crawfish harvest are red swamp and white river crawfish.
