After giving birth to their first child, Armando, in 1908, the Italian restaurateur was attempting to convince his wife, Ines, to eat. He came up with a recipe that used noodles, cheese, and butter, which gave the dish a deliciously creamy texture.

Fettuccine Alfredo became a favorite dish for his wife, and Di Lelio added it to the menu at his mother’s restaurant, Piazza Rosa, since it was so wonderful. The recipe was a huge success, and Piazza Rosa became renowned as the home of Fettuccine Alfredo. Alfredo Di Lelio built his first restaurant, “Alfredo,” in Rome in 1914 and subsequently opened another with his son in 1950. He built a variant of the restaurant in New York City in 1977, and it quickly became a smash.

The dish initially arrived in America in the 1920s. American vacationers returned home and raved about it so much that the meal and Alfredo’s restaurant were featured in several publications and guidebooks. Since then, the dish’s popularity has only expanded, with restaurants like Olive Garden popularizing their own version.
