Muffins have been around for generations, dating back to English-style muffins. This form of muffin, which dates back to the 10th century in Wales, employs yeast to rise and is fried on a griddle. By the 18th century, Americans had improved on the muffin recipe and created what we now call “quick bread muffins,” which are baked in individual molds. When pearlash was found, this type of muffin became conceivable. Pearlash, or potash, as it is more widely known, was finally phased out when baking soda became more popular.

Because batter is used instead of dough to make American-style muffins, molds are required for baking. The form and size are comparable to cupcakes, and recipes for oatmeal muffins first appeared in American cookbooks in the mid-1800s.

Pearlash was used in recipes by Amelia Simmons, the author of the first American cookbook, “American Cookery.” The popularity of pearlash grew to the point where over 8000 tons were sold to Europe in 1792. Baking powder did not become commercially accessible until 1857.
