Pears Helene was created in 1864 by French Chef Georges Auguste Escoffier, who served pears poached in sugar syrup with vanilla ice cream, chocolate syrup, and crystallized violets. He invented this meal in commemoration of Jacques Offenbach’s musical La Belle Hélène. This classic and delicious meal has changed over time.
