📜 History of National Scrapple Day

When the recipe arrived in America, the buckwheat was frequently changed or supplemented with cornmeal. Using indigenous ingredients like maize was no problem for the colonists as long as the meal was basic and humble, and everything was used.

Scrapple was invented so that hungry, hardworking, and prudent rural immigrants could make use of all manner of foodstuffs. It originally consisted of a mixture of pork scraps, offal, and other trimmings boiled with bones attached to make a broth, then simmered with cornmeal, wheat flour, or sometimes buckwheat flour, onions, and spices such as sage and thyme. The finished loaf is then split and pan-fried like a burger.

It was a meal formed out of a desire not to see anything go to waste. While today’s scrapple complies with various standards and is mostly accessible in Mid-Atlantic area grocery stores, it is still a delightful tradition, commonly eaten alongside sunny-side-up eggs and toast or in sandwiches. Scrapple is also known to be prepared using turkey instead of the traditional pork, or with beef for a whole new flavor. Scrapple is also showing up on the menus of heritage-focused restaurants in Brooklyn, NY, and outside the Mid-Atlantic region.
